Ingredients
- 4 Salmon Steaks (or Lake Trout)
- 1/3 Cup Olive Oil
- 2 TBSP Lemon Juice
- 4 TBSP Melted Butter
- 2 TBSP Finely Chopped Shallots or Scallions
- 1/2 TSP Dried Tarragon
- Salt and Pepper
Optional
- Parsley
- Black Olives
- Lemon Wedges
Instructions
Combine olive oil, lemon juice, shallots/scallions, tarragon, salt, and pepper.
Coat each side of steaks with mixture and broil 4 inches under heat for 7-8 minuets on each side.
Baste often with melted butter during the broiling process.
(If fillets are used instead of thicker steaks, broil for a shorter time)
Garnish with parsley, black olives, and lemon wedges.
